Everyone knows balsamic means Modena, the Italian city of Ferrari and delicious food but not many information are available about balsamic.
What is balsamic?
The industry calls it “Balsamic Vinegar” but vinegar and balsamic are very different products and authentic balsamic has no vinegar in it.
That is why we call it “Traditional Balsamic” to differentiate it from the common balsamic vinegar found in the market.
Traditional balsamic vinegar is produced from the juice of just-harvested white grapes (typically, Trebbiano grapes) boiled down to reach a minimum sugar concentration of 30% (brix) or more in the must, which is then fermented with a slow aging process which further concentrates the flavours.

He produces exclusively the traditional balsamic, the white balsamic and the jam.
